The addition of oysters, mussels, and seaweed introduces a complex marine salinity that weaves through a backbone of coffee-and-cream maltiness. While the roasted malts provide deep chocolate and charred notes, the salt water enhances the savory depths, creating a singular umami-forward experience. This is a rustic, maritime ale where the silky texture of oats meets the mineral-driven snap of the sea, finishing with a lingering, savory wisp of ocean air and dark-roasted grain.
Appearance. Opaque black with a thick, creamy, and persistent tan head; exhibits excellent lacing.
Aroma. Moderate roasted grain intensity featuring coffee and dark chocolate, accented by a distinct briny, mineral-rich oceanic character from the seaweed and shellfish. Low earthy hop aroma and subtle dried fruit esters.
Taste. Initial roasted malt sweetness of milk chocolate and toasted nuts quickly transitions to a savory, saline mid-palate from the sea water and mussels. Medium bitterness is balanced by a silky oatmeal texture. The finish is medium-dry with a lingering aftertaste of roasted coffee and mineral salt.
