This session-strength Saison is a hop-free expression of the Forth River Valley, showcasing a complex grist of Tasmanian barley, quinoa, buckwheat, rye, and oats. At a refreshing 3.5% ABV, it prioritizes a rustic, multi-layered grainy backbone over traditional hop bitterness. The fermentation profile is defined by delicate fruity esters—reminiscent of pome and citrus fruits—complemented by a refreshing, clean acidity that replaces hop structure for balance. The inclusion of rye provides a subtle spice, while the oats contribute a smooth texture to an otherwise bone-dry palate. It is a highly moreish, effervescent ale designed specifically for the table.

Appearance. Pale straw to light gold (4–6 SRM). Hazy and unfiltered with a dense, rocky white head that demonstrates excellent retention and light Belgian lacing. Highly effervescent.

Aroma. Moderate intensity featuring a clean, grainy malt base of Tasmanian barley. Notable rustic and earthy notes from buckwheat and quinoa with a hint of spicy rye. Fruity esters are moderate, suggesting green apple and lemon peel. Significant lactic acidity is present; no hop aroma.

Taste. Initial tartness leads into a complex, grainy palate. Distinctive flavors of earthy buckwheat and nutty quinoa are balanced by a subtle spicy rye character. The absence of hops results in zero hop flavor and bitterness, with refreshing acidity providing the necessary structure. High attenuation leads to a bone-dry, crisp finish with a lingering pome fruit and grainy aftertaste.

Mouthfeel. Light body with a smooth, slightly creamy texture from the oats. High, effervescent carbonation. No alcohol warmth. Crisp and refreshing with a light, clean acidic bite and no astringency.
