This Tasmanian Wild Ale presents a complex, evolving sensory journey rooted in its spontaneous fermentation. Aromas of sun-dried hay, farmhouse funk, and aged lemon zest lead into a bright, citrusy palate. The solera aging process imparts layers of dried stone fruit and a subtle, woody depth that balances the sharp, refreshing acidity. Expect a bone-dry finish with a lingering earthy quality. This Brett Beer showcases a sophisticated interplay between wild yeast character and a lean malt backbone, resulting in a rustic yet refined profile that captures the essence of its farm-based origin and the unique microflora of its environment.
Appearance. Pale straw to deep gold (4-7 SRM). Moderate white head with fair retention and light lacing; slight haze characteristic of spontaneous fermentation and solera blending.
Aroma. Moderate to high intensity. Complex wild yeast-forward nose featuring barnyard funk, wet hay, and aged leather. Bright citrus notes of lemon peel and underripe peach. Low grainy malt sweetness with a hint of sourdough.
Taste. Initial tartness of lemon and green apple gives way to a complex mid-palate of earthy, spicy funk and rustic grain. Low hop bitterness, with the natural acidity and carbonation providing the primary balance. Bone-dry finish with a lingering mineral and leather aftertaste.
Mouthfeel. Light to medium-light body. High carbonation provides a crisp, effervescent prickle. Minimal alcohol warmth. Low astringency from aged wood contact, finishing very clean and refreshing.

This has all been made possible by the slow, experimental learnings of a dedicated 18-year journey of exploration culminating, over the course of the last 4 pandemic-corrupted-years, when on each occasion we brewed a batch of ‘A Cleansing Ale’, we separated a volume of the base wort and allowed it to spontaneously wild ferment. The oak barrels accumulated in our cellar, growing numerically such that they began to populate all available floorspace & sheds, eventually, and recently, spilling into the rows between our hop bines. In August 2022 we siphoned an aliquot from each barrel, blending the pieces of this time-puzzle onto hop flowers in a tank and then, in September, we bottled it.
Not only spontaneously fermented, but spontaneously bottle conditioned! Be in no doubt about this whatsoever, this is magic! The original witchcraft in fact!
