This Weissbier captures the essence of Bavaria with a vibrant sensory profile. It leads with a pronounced yeast-driven bouquet of ripe banana and spicy clove, accentuated by an unusual but refreshing lemongrass-like citric edge. The use of malted wheat and Pilsner malt provides a soft, bready foundation that balances the ester-heavy profile. Appearance. Pale straw to deep gold (3-5 SRM) with a characteristic heavy haze from suspended yeast and wheat proteins. Topped by a thick, moussy, long-lasting white head with excellent lacing.
Aroma. High intensity aromatics of banana and spicy clove dominate, complemented by a distinct zesty lemongrass note. Beneath the fermentation esters lies a moderate scent of bready, doughy wheat and a subtle grainy-sweet malt character.
Taste. Initial impression is a burst of banana and clove, followed by a soft, bready wheat flavor. A unique, mild lemony acidity provides a fresh quality that cuts through the malt sweetness. Bitterness is very low, resulting in a balanced, slightly tart, and highly refreshing palate with a crisp, dry finish and a spicy aftertaste.
Mouthfeel. Medium-light body with a fluffy, creamy texture. Very high carbonation creates a spritzy, effervescent sensation on the tongue. Minimal alcohol warmth is present at 5% ABV.
