This American Stout is a festive, robust interpretation of a Dutch holiday classic. It features a deep foundation of roasted malts and dark chocolate, enriched by the indulgent addition of caramelized brown sugar. The sensory experience is defined by a bold Speculaas spice profile, where cinnamon, clove, and nutmeg punch through the dark grain character. At 8% ABV, it offers a gentle, well-integrated warmth that complements its smooth, full-bodied texture. The finish is balanced by a lingering roasted bitterness and seasonal spice, evoking the cozy complexity of traditional pepernoten cookies enjoyed by a winter fire.
Appearance. Opaque, jet black (40 SRM) with a large, persistent, creamy light brown head that leaves significant lacing on the glass.
Aroma. High intensity; dominant aromas of cinnamon, nutmeg, and clove layered over a strong roasted malt profile of dark chocolate and espresso. Low resinous hop aroma and a hint of caramelized sweetness.
Taste. Initial flavors of bittersweet chocolate and roasted coffee beans. The mid-palate is dominated by Speculaas spices—clove, nutmeg, and cinnamon—supported by rich brown sugar. Medium-high bitterness provides balance against the malt sweetness, leading to a medium-dry finish with a lingering roasted and spicy aftertaste.
