Northern Monk
This collaboration captures the bridge between old-world character and New World intensity. A robust Double IPA, it opens with a tropical explosion driven by Mosaic hops, layered over the subtle, earthy undertones of UK Jester hops. The foundation is built on Maris Otter malt, which provides a smooth, bready, cookie-like depth, while London Fog yeast contributes soft, fruity esters that round out the profile. Despite its 8% ABV, the beer remains exceptionally drinkable, balancing a firm bitterness with a velvety texture. It is a harmonious marriage of British malt heritage and contemporary hop saturation, finishing with a clean, resinous linger.
Appearance. Deep gold to pale copper (approximately 9 SRM). The pour produces a thick, persistent, off-white head with excellent lacing. Though generally clear, a soft, luminous haze is present from the dry-hopping and yeast choice.
Aroma. High intensity. Leading with ripe mango, passionfruit, and blueberry from the Mosaic hops, followed by a distinct herbal and earthy spice from the UK Jester. A background of toasted biscuit and honey-like Maris Otter malt supports the esters of stone fruit and pear from the London Fog yeast strain.
Taste. Initial punch of tropical fruit and resinous pine. The mid-palate reveals a smooth, bready malt sweetness reminiscent of baked goods and grain. Firm hop bitterness is high but well-integrated, never becoming harsh. UK Jester adds a classic leafy, earthy counterpoint to the vibrant Mosaic fruit. Finishes medium-dry with a lingering note of citrus rind and earthy spice.
Mouthfeel. Medium body with a smooth, almost creamy texture. Carbonation is moderate-high, providing a crisp lift. A gentle, well-integrated alcohol warmth is present at 8% ABV, without any fusel heat or astringency.
