Heading Up is a bold Specialty IPA that masterfully balances a complex eight-grain malt backbone with a heavy-handed addition of Comet, Chinook, and Simcoe hops. The aroma is dominated by the resinous and bright citrus punch of Comet and Chinook, supported by the signature damp pine and earthy forest floor notes of Simcoe. Visually striking with its deep, dark mahogany hue, it offers layers of toasted bread and light cocoa without becoming overly roasted or acrid. The flavor profile leads with grapefruit zest and sticky pine needles, transitioning into a smooth, dark malt depth that remains crisp. It finishes dry and firm, delivering a robust yet refreshing experience.
Appearance. Dark brown to near-black (30-38 SRM) with good clarity despite its depth. It features a persistent, creamy, light-tan head with excellent retention and decorative lacing.
Aroma. High intensity hop aroma characterized by pungent pine resin, grapefruit, and lemon zest. A moderate malt character provides supporting notes of toasted crust, light chocolate, and coffee, with a clean fermentation profile devoid of significant esters.
Taste. Initial flavors of bright citrus and resinous pine from the Comet and Chinook additions. A complex malt profile follows with hints of dark toast and unsweetened cocoa, avoiding burnt or ashy notes. Bitterness is firm and assertive (approximately 60-70 IBU), balancing the malt and leading to a dry, clean finish with a lingering hop resin aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate, providing a crispness that cuts through the malt. A light, well-integrated alcohol warmth is present, without any harsh astringency.
