Two Chefs Brewing Happy Trails
Happy Trails is a vibrant American IPA that bridges the gap between West Coast bitterness and Southern Hemisphere hop aromatics. A powerhouse trio of Riwaka, Nelson, and Motueka hops delivers an intense sensory profile defined by crushed lime, passion fruit, and a distinctive white-wine grape character. Its brilliant gold appearance and persistent white head lead into a palate where 70 IBU of punchy bitterness is balanced by a lean, cracker-like malt backbone. The finish is remarkably crisp and dry, emphasizing the resinous and tropical fruit notes characteristic of this bold collaboration between Two Chefs and Dok Brewing.
Appearance. Medium gold (approx. 7 SRM) with brilliant clarity. Features a medium-sized, frothy white head with excellent persistence and significant lacing.
Aroma. High intensity hop aroma with prominent notes of lime zest, gooseberry, and tropical passion fruit. Low, clean, grainy maltiness provides a neutral base. Fermentation profile is very clean, lacking significant esters to ensure hop focus.
Taste. Initial impression is sharply bitter and hop-forward. Flavors of citrus oil, tropical fruit, and a hint of resinous pine dominate. Malt flavor is low, presenting as clean white bread or neutral grain. Finishes decidedly dry with a lingering, clean hop bitterness and no harshness.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to medium-high carbonation provides a refreshing mouth-cleansing effect. Very light, smooth alcohol warmth is present at 6.5% ABV.
