The primary sensory driver is the deep, earthy blueberry character, which has been transformed through fermentation into a bright, tart profile. It leads with a sharp, refreshing lactic acidity that intertwines with dark berry skins and floral esters. Unlike a sweet fruit beer, the blueberry presence is sophisticated and dry, bolstered by a subtle wild fermentation character that provides complexity without overwhelming the fruit. The result is a vibrant, acidic ale that balances rustic charm with a crisp, modern sour finish.
Appearance. Deep magenta to purple hue (20-30 SRM) with a fine-beaded, pink-tinted head that shows moderate retention. The body is hazy, reflecting the use of whole fruit during fermentation.
Aroma. High intensity of fresh, earthy blueberries and dark berry skins. Low grainy-sweet malt presence is overshadowed by a clean, sharp lactic acidity and very light floral esters. No hop aroma is present; a subtle, rustic wild funk may be detected in the background.
Taste. The initial impression is one of sharp, refreshing tartness. Authentic blueberry flavors dominate, characterized by fermented berry juice and a slight tannic skin quality. Malt flavor is low and neutral. Hop bitterness is unnoticeable, as the balance is firmly shifted toward acidity. The finish is very dry and clean with a lingering, tart berry aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a prickly, effervescent sensation. Alcohol warmth is very low and well-integrated. A slight berry-derived tannic astringency adds structure to the mouthfeel without being harsh.
