This Wild Specialty Beer, a collaboration between Turning Point and Siren, presents a complex marriage of tropical fruit and decadent adjuncts. The sensory profile is dominated by the pungent, sweet-tart character of guava, which is beautifully supported by a subtle, earthy depth from the cacao. On the palate, the sharp lactic acidity of the wild fermentation is softened by a smooth vanilla presence, creating a mouthfeel that belies its moderate strength. Appearance. Straw to pale gold with a subtle pinkish-orange hue. Hazy to opaque clarity. Minimal white head with low retention, typical for high-acidity wild ales.
Aroma. High intensity. Punchy tropical guava dominates with notes of passionfruit and citrus. Smooth, creamy vanilla aromatics provide a sweet counterpoint to the sharp lactic acidity. Subtle earthy cacao nibs and a hint of funk from the wild fermentation add complexity. No hop aroma.
Taste. Tart guava flavors lead, offering a bright, acidic punch. The mid-palate is smoothed by a noticeable vanilla presence that rounds out the sharp edges of the lactic sourness. Cacao provides a dry, slightly bitter, chocolatey backbone. Malt is low and neutral, reminiscent of cracker. Finish is dry and acidic with lingering tropical fruit esters and very low hop bitterness.
Mouthfeel. Medium-light body with a slightly creamy texture from the vanilla and cacao additions. Moderate to high carbonation provides a crisp, refreshing prickle. Very low alcohol warmth. Minimal astringency.
