This collaboration braggot presents a unique sensory bridge between traditional Yorkshire brewing and Welsh mead-making. Hexagon Architect leads with a vibrant interplay of tart, freshly cut rhubarb and the complex floral depth of Hive Mind wildflower honey. The honey contributes delicate nuances of bramble and lime, punctuated by a refreshing minty lift. Its grain bill of wheat and oats provides a soft, cushioning texture that balances the sharp acidity of the fruit. This Alternative Sugar Beer is crisp yet nuanced, offering a sophisticated botanical experience that highlights the distinct regional characteristics of its specialty ingredients.
Appearance. Pale straw to light amber with a subtle pinkish hue from the rhubarb (4–8 SRM). Large, creamy white head with moderate retention and light lacing. Hazy to opaque due to the use of oats and wheat.
Aroma. Moderate-high intensity. Dominant tart rhubarb and floral honey sweetness. Subtle minty and lime-like botanical notes from the wildflower honey. Low grainy-sweet malt presence from wheat and oats. Clean fermentation profile with very low hop aroma.
Taste. Initial burst of sharp rhubarb acidity, quickly softened by wildflower honey sweetness. Flavors of bramble and citrus zest emerge mid-palate. Low hop bitterness (approx. 10-15 IBU context), allowing the honey and fruit to lead. Malt character is bread-like and smooth. Finishes off-dry with a lingering herbal mint note and pleasant tartness.
Mouthfeel. Medium body with a notable creaminess and silky texture from the oats and wheat. Moderate to high carbonation provides a lively, refreshing prickle. Minimal alcohol warmth. Low astringency from the rhubarb.
