This Australian Sparkling Ale offers a vibrant exploration of Southern Hemisphere hops, blending the tropical passionfruit of Galaxy with the floral, spicy nuances of Ella and the distinct crushed grape character of Nelson Sauvin. Appearance. Medium gold to deep yellow (SRM 5-6). Features a tall, frothy, and persistent white head with excellent lacing. Shows brilliant clarity if decanted, or a characteristic slight haze if the yeast is roused during the pour, driven by intense effervescence.
Aroma. Moderate intensity with a clean, balanced profile. Bready and grainy malt notes support hop-derived aromas of passionfruit, white wine grapes, and floral spice. Esters are present as soft pear and apple, with a very faint, clean yeast character and no caramel.
Taste. Initial impression is malty-sweet with a grainy, cracker-like malt flavor, quickly overtaken by a medium-high bitterness. Hop flavors of citrus, earthy resin, and gooseberry are prominent. Finishes very dry and crisp with a lingering, clean hop bitterness and light fruit esters of pear.
Mouthfeel. Medium-full body with a very high, spritzy carbonation that creates a mouth-filling, scrubbing bubbles sensation. Smooth despite the high gas content; no noticeable alcohol warmth or astringency, presenting a highly attenuated and refreshing mouthfeel.
