This collaboration with Brew York presents a decadent, viscous Imperial Stout enriched by its time in bourbon barrels. The profile is defined by an indulgent hazelnut and rich caramel sweetness, underpinned by a deep, espresso-like mocha character. Intense aromas of vanilla and charred oak from the wood maturation meld with robust dark roasted malts, offering notes of bittersweet chocolate and black molasses. At 12% ABV, it provides a smooth, lingering warmth that complements the chewy, full-bodied texture. This Second Breakfast is a complex, velvety dessert in a glass, balancing roasted bitterness with luxurious adjunct layers.
Appearance. Jet black and opaque (40+ SRM). Deep tan, dense head with moderate retention; produces visible legs on the glass due to high viscosity and alcohol content.
Aroma. High intensity; rich bouquet of dark chocolate and roasted coffee beans. Strong hazelnut and caramel presence layered with bourbon-derived vanilla and charred oak. Low dark fruit esters resembling raisins; no perceptible hop aroma.
Taste. Intense initial impression of sweet caramel and nutty hazelnut. The mid-palate reveals heavy roast, bittersweet cocoa, and espresso. Bourbon-soaked wood and vanilla provide complexity. Moderate-high bitterness provides necessary balance against significant residual sweetness. The finish is long and warming with a lingering mocha aftertaste.
Mouthfeel. Full to very full-bodied; thick, chewy, and luscious texture. Low to moderate carbonation. Significant but smooth alcohol warmth is present without being sharp. High creaminess enhanced by the use of wheat.
