This English Cider showcases the Kentish Russet apple in its most natural, unadulterated form. Expect a still, intentionally hazy pour that releases an intense, earthy aroma of ripe orchard fruit characterized by a distinctive, signature nutty undertone. Appearance. Deep gold to amber in color (8–12 SRM). Completely still with no head formation, carbonation, or lacing. Notable haze and sediment due to being unfiltered.
Aroma. High intensity with a dominant character of ripe, bruised apples and a unique, earthy nuttiness specific to the Kentish Russet. Subtle spicy phenols and a clean, warming alcohol note are present, with no sulfur or off-flavors from the unpasteurised fermentation.
Taste. Initial impression is bone dry and austere. Deep apple flavors are complemented by a savory, walnut-like nuttiness. High acidity and moderate-plus tannic bitterness provide a firm structure. The finish is long and drying with a persistent apple skin character and no residual sugar.
Mouthfeel. Medium to medium-full body with a slight viscosity from the lack of filtration. Completely still (no carbonation). Noticeable alcohol warmth provides a pleasant weight, accompanied by a moderate tannic astringency that dries the gums.
