This aged Belgian Tripel presents a complex sensory journey, merging traditional Trappist monastery yeast character with a unique secondary fermentation using cider yeast. Initial notes of orchard fruit and light citrus esters give way to a smooth, honey-like malt backbone. Despite its aged depth, the beer remains effervescent and refreshing, balancing a delicate sourness against a lingering, sweet malt finish. Appearance. Russet red to golden in color with a slight haze due to sediment and bottle conditioning. Features a long-lasting, creamy, white head with excellent retention and characteristic lacing.
Aroma. High intensity with a complex bouquet of peppery and clove-like phenols from the Trappist yeast. Distinctive citrus esters and a unique sweet and sour apple character from the cider yeast fermentation are present, supported by a light, grainy-sweet malt background.
