The five-year aging process has mellowed the toasted bread and nutty malt character, allowing a unique addition of Lactobacillus to shine. This provides a refreshing grapefruit sourness that cuts through the initial bready sweetness. The palate experiences a bright, citric acidity that slowly ebbs, leading into a sweet, dark-malt finish that highlights the beer's significant depth and maturation.
Appearance. Deep copper to dark brown (17-28 SRM) with a luminous ruby-red glow. Pours with a smooth, creamy, medium-tan head showing excellent carbonation and retention. Generally clear, though a slight sediment may be present due to the five-year aging process.
Aroma. Moderate to high malt richness featuring toasted bread crust, hints of caramel, and a subtle nuttiness. The clean lager profile is punctuated by a high intensity of lactic acidity, contributing a sharp, grapefruit-like citrus note that overrides any traditional spicy or herbal hop character.
Taste. The initial impression is defined by a refreshing grapefruit sourness from the Lactobacillus addition.
