Tsunami’s Lato Oscuro is a captivating take on a Belgian Dark Strong Ale, pouring a deep mahogany with a resilient, cream-colored head. The sensory profile is dominated by a luxurious blend of Ghana and Haiti cocoa, weaving together bittersweet chocolate notes with the bright, stone-fruit esters of apricot puree. An unconventional Saison yeast strain introduces a peppery edge that complements a subtle dusting of cinnamon spice. On the palate, the 8.5% alcohol provides a clean, integrated warmth that balances the initial fruit sweetness, leading to a surprisingly dry, spicy finish that highlights both the rich cocoa and lingering apricot character.

Appearance. Deep mahogany to coppery-brown in color with rich garnet highlights. It features a huge, dense, and persistent cream-colored head with excellent lacing. Clarity is clear to brilliant.

Aroma. High intensity with a complex mix of toasted, bready malt and intense cocoa notes from Ghana and Haiti blends. Prominent esters of ripe apricot are balanced by spicy phenols—specifically black pepper from the Saison yeast—and a light, sweet bark note of cinnamon. Alcohol is soft and perfumy.

Taste. Rich maltiness defines the initial impression, followed quickly by layers of bittersweet chocolate and sweet apricot puree. The mid-palate introduces a light cinnamon spiciness and peppery yeast character. Bitterness is medium-low, allowing the malt and fruit to lead.
