This decadent Imperial Stout presents a masterful fusion of extended barrel maturation and dessert-inspired adjuncts. Having rested for twenty-seven months in Templeton Rye whiskey barrels, it exudes a sophisticated marriage of spicy rye grain and charred oak. The addition of Tahitian vanilla lends a floral sweetness that complements the earthy, nutty undertones of pistachio. A luxurious, velvety mouthfeel is achieved through the use of cocoa butter, softening the robust roasted malt profile of dark chocolate and espresso. Despite the high alcohol content, the spirit character is remarkably integrated, finishing with a lingering warmth and a complex, bittersweet harmony of spice and cream.
Appearance. Jet black and completely opaque. Pours with a thick, dense, dark tan head that shows moderate retention. High viscosity is evident by the persistent legs that form on the glass when swirled.
Aroma. High intensity with a complex blend of bittersweet chocolate, espresso, and burnt grain. Prominent rye whiskey notes provide scents of black pepper and toasted oak, intertwined with floral Tahitian vanilla and a distinctively earthy, nutty pistachio presence. Subtle dark fruit esters of prune and raisin linger in the background.
Taste. Intense initial flavors of dark chocolate and heavily roasted coffee. The mid-palate is dominated by the spicy influence of the rye whiskey barrels and charred oak. Tahitian vanilla provides a creamy, floral bridge to the savory pistachio notes. Medium-high bitterness is well-supported by a rich malt backbone and the fatty, smooth character of cocoa butter. The finish is long and warming with a balanced, bittersweet aftertaste.
Mouthfeel. Very full-bodied, chewy, and luscious. The addition of cocoa butter provides a velvety, coating texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present, reflecting the beer's strength without being sharp.
