Imperial Stout 14 º
Monkey Trouble is a decadent Imperial Stout that commands attention with its massive, syrupy presence. Deeply influenced by thirty months in Heaven Hill Bourbon and Rittenhouse Whiskey barrels, the base reveals layers of charred oak, spicy rye, and rich vanillin. The addition of Wild Thai Banana creates a dense, caramelized fruit heart, harmonizing with the toasted, nutty character of Coconut. Marshmallow rounds out the mid-palate with a soft, confectionary sweetness. Intense notes of dark chocolate and espresso from the roasted malts provide a structural counterpoint to the boozy warmth, resulting in a complex, dessert-like experience with a long, spirit-forward finish.
Appearance. Jet black and opaque (SRM 40+). Pours with a thick, viscous consistency. Head is dark tan to mocha-colored with low retention; moderate lacing and visible legs are present on the glass.
Aroma. High intensity. A complex bouquet of toasted coconut, caramelized banana, and vanilla bean. The barrel aging introduces deep bourbon and spicy whiskey notes, alongside charred oak, leather, and dark chocolate. Secondary notes of marshmallow sweetness and a pleasant, integrated alcohol warmth.
Taste. An explosion of bittersweet chocolate, espresso, and burnt malt. Initial sweetness from marshmallow and coconut is balanced by oak tannins and whiskey spice. Mid-palate features rich, stewed banana and fig flavors. Bitterness is moderate but masked by the high residual sugar. The finish is long and warming, with lingering vanilla and a vinous, port-like character.
Mouthfeel. Full to very full-bodied; thick, chewy, and luscious. Low carbonation enhances the velvety, syrupy texture. Significant but well-integrated alcohol warmth provides a soothing heat without being harsh or solventy.
