Imperial IPA 8 º
This Double IPA, a collaboration with Mumford Brewing, delivers an intense and saturated sensory profile driven by a heavy-handed application of Citra, Cryo Citra, Simcoe, and Cashmere hops. The aroma leads with a punchy citrus and tropical fruit character, featuring grapefruit pith and ripe mango from the Citra and Cryo Citra. Simcoe introduces a resinous, evergreen depth, while Cashmere provides a subtle melon and lemon-lime softness. At 8% ABV, the beer maintains a lean, clean malt profile that allows the hop oils to dominate. It finishes crisp and dry with a firm, lingering bitterness, embodying a modern yet classic West Coast strength.
Appearance. Pours a brilliant gold to light orange-copper (SRM 7) with a moderate, persistent, creamy off-white head that leaves intricate lacing. Clarity is high, though a faint hop-derived haze may be present.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit, passion fruit, and orange zest. A secondary layer of resinous pine and dank earthiness adds complexity. Very low, neutral, grainy maltiness provides a clean background, accompanied by a clean fermentation profile with virtually no esters.
Taste. The palate is dominated by bold hop flavors of lemon-lime, crushed pine needles, and tropical pineapple. Bitterness is moderately high and firm, providing structure without being harsh. A low, supportive, cracker-like malt character stays in the background. The finish is medium-dry to dry, leaving a lingering impression of citrus oils and sticky resin.
Mouthfeel. Medium-bodied with a smooth, slightly oily texture. Carbonation is medium-high, providing a lively prickle on the tongue. A well-restrained, smooth alcohol warmth is present but never solventy. No astringency.
