Drips of Heaven is a decadent Imperial Stout that showcases an extraordinary depth of flavor derived from extended double barrel-aging. The interplay between 28 months in Willett bourbon barrels and 32 months in Costa Rican rum barrels creates a complex foundation of spiced rum cake and oaky vanilla. Lavish additions of cacao nibs and Guatemalan Cribbiana vanilla drive a rich fudge character, while macadamia nuts add a subtle, buttery toasted nuttiness. The addition of maple syrup provides a warm, lingering sweetness that coats the palate. Poured thick and silky, this high-gravity sipper balances intense roast with luscious, dessert-like layers.
Appearance. Jet black (SRM 40) and completely opaque. It pours with a thick, deep tan head that shows moderate retention and leaves viscous legs on the glass, indicating high extract and alcohol.
Aroma. Intensely aromatic with a complex blend of rich fudge from cacao nibs and the distinct, buttery profile of macadamia nuts. Prominent notes of maple syrup and Guatemalan Cribbiana vanilla meld with charred oak and caramel from the Willett bourbon barrels. Secondary aromas of spiced molasses, plums, and raisins emerge from the Costa Rican rum barrels.
Taste. A massive initial impression of liquid fudge and maple-soaked rum cake. The mid-palate reveals layers of toasted macadamia nut and dark chocolate roast, supported by a moderate bitterness that prevents the beer from being cloyingly sweet. The finish is long and warming, featuring lingering notes of dark sugar, vanilla, and a refined spirit character from the extended barrel maturation.
Mouthfeel. Full-bodied and exceptionally viscous with a velvety, chewy texture. Carbonation is low, enhancing the creamy, palate-coating mouthfeel. A significant but smooth alcohol warmth is present, appearing well-integrated rather than sharp.
