The Observer is a lush, oat-based Hazy Double IPA that delivers a saturated hop experience through an intensive triple dry-hopping process. Cascade, Simcoe, and Sultana hops combine to create a vibrant sensory profile defined by bright pineapple, zesty citrus, and deep resinous pine. The significant addition of oats provides a silky, substantial texture that elegantly carries the assertive alcohol strength. Aromas of tropical fruit and forest floor lead into a palate where hop saturation is paramount, showcasing the interplay of classic and modern varieties. This beer offers a modern, hazy interpretation of the Double IPA style, emphasizing juice-like intensity and a smooth, rounded finish.
Appearance. Pale gold to light orange (SRM 4-7). Opaque and hazy due to the heavy use of oats and dry-hopping. Features a moderate-sized, persistent, white head with significant lacing.
Aroma. High intensity hop aroma featuring prominent notes of pineapple and tropical fruit from Sultana, citrus zest from Cascade, and a resinous, piney backbone from Simcoe. Background malt is low and neutral with a soft, grainy, bready character from the oats. Fermentation is clean with light fruity esters.
Taste. Initial impression is an explosion of hop-derived fruit, specifically grapefruit and ripe pineapple. Malt flavor is low but supportive, offering a soft, bready sweetness. Hop bitterness is moderately high but lacks harshness, appearing more rounded than traditional examples. Finishes medium-dry with a lingering, resinous hop aftertaste and a clean, smooth alcohol presence.
Mouthfeel. Medium-full body with a notable creamy, silky texture derived from the oats. Carbonation is moderate. Displays a light, smooth alcohol warmth that is well-integrated. No hop-derived astringency is present.
