This bold Wild Specialty Beer opens with an intense, bright citrus bouquet driven by additions of lemon, Key lime, and white grapefruit. The vibrant citrus aromas harmoniously interlace with a clean, sharp lactic acidity and a subtle, rustic wild fermentation funk. On the palate, a bracing, mouth-watering sourness takes center stage, bursting with fresh-squeezed lime juice and tart grapefruit pith, balanced by a delicate malt sweetness that softens the high 8% ABV. Crisp, dry, and highly effervescent, it delivers a refreshing, tongue-tingling finish that showcases the interplay of intense citrus fruits and a complex wild yeast character.
Appearance. Pale straw to light golden yellow with a slight, hazy yeast cloudiness. Pours with a moderate, fast-receding white head that leaves minimal lacing, typical of high-acid wild ales.
Aroma. High intensity aroma dominated by fresh squeezed Key lime, zesty lemon, and bitter grapefruit peel. Underneath the citrus explosion lies a moderate lactic tartness with a very subtle, earthy, and leathery wild yeast funk. No hop aroma or diacetyl.
Taste. An immediate, sharp lactic sourness that mimics the acidity of citrus juice. Dominant flavors of tart Key lime and zesty lemon dominate the palate, followed by a dry, slightly bitter white grapefruit finish. Malt presence is low, providing just enough crackery background to support the intense acidity. Hop bitterness is very low, but the citrus pith provides a subtle, pleasant bitterness. Finishes dry, crisp, and highly acidic.
Mouthfeel. Medium-light body, lighter than typical for an 8% ABV beer due to high attenuation. Carbonation is high and effervescent, causing a prickly, lively sensation. Alcohol warmth is very low to subtle, exceptionally well-integrated. Slight astringency from the citrus peel/grapefruit pith.
