A base of Pilsner malt provides a crisp foundation, while the addition of chocolate malted wheat introduces sophisticated nuances of coffee and soft cocoa. Fermentation yields the classic weizen profile of ripe banana and spicy clove, harmonizing with the subtle floral and citrus accents of Cascade hops. Despite its dark mahogany hue, the beer remains light and approachable. Nugget hops contribute a clean, restrained bitterness that ensures a balanced finish, making this a flavorful yet highly sessionable dark wheat ale.
Appearance. Deep copper to dark mahogany brown (17–22 SRM). Highly hazy with a thick, moussy, long-lasting off-white head that exhibits excellent retention.
Aroma. Moderate intensity featuring a classic balance of ripe banana esters and spicy clove phenols. The malt profile is bready and doughy with distinct caramel and toasted bread crust notes, accompanied by a faint hint of dark chocolate. Low floral and citrus hop character from the Cascade addition.
Taste. Initial impressions of bready wheat and sweet caramel. Mid-palate flavors of banana and clove are well-integrated with toasted malt and a subtle cocoa or coffee roastiness. Very low hop bitterness provides just enough balance against the malt sweetness. The finish is relatively dry and clean, leaving a lingering impression of spicy yeast and toasted grain.
