Velocirapture is a vibrant Wild Specialty Beer that showcases a complex marriage of tropical and vinous characters. The intense, tangy aroma of fresh passionfruit leads the profile, supported by the elegant, red-berry depth of Pinot Noir grapes. Hints of crisp apple juice provide a bright, orchard-like acidity that cuts through the wild fermentation's funky nuances. Because it is a gluten-free sour ale, the base remains light and unobtrusive, allowing the fruit and yeast-derived lactic sharpness to shine. The finish is remarkably dry and effervescent, leaving a lingering impression of tropical tartness and soft grape tannins from the fruit skins.
Appearance. Pours a hazy, pale rose to deep pink color (6-9 SRM) depending on the grape skin contact. Features a moderate, light pink-tinted head with fair retention that fades to a fine ring and leaves light lacing.
Aroma. High intensity aromatics of tropical passionfruit and earthy, vinous Pinot Noir grapes. Subtle orchard notes of green apple juice are present. Fermentation character is moderately funky with notes of hay and leather, backed by a sharp, clean lactic acidity. Hop and malt aromas are negligible.
Taste. Initial impression is bracingly tart and fruit-forward. Intense flavors of passionfruit and red grape skins dominate, while the apple juice adds a crisp, acidic backbone. Malt flavor is very low and neutral. Hop bitterness is nearly absent, with the balance driven entirely by high acidity. The finish is bone dry and lingering with a vinous, fruity aftertaste.
Mouthfeel. Medium-light body with high, spritzy carbonation. Alcohol warmth is very low. A noticeable but pleasant tannic astringency from the Pinot Noir grapes provides structure and enhances the dry sensation on the palate.
