This 2023 vintage of Junie presents an opulent sensory journey, starting with the spicy, earthy depth of rye malt. As a high-gravity American Stout, it showcases a luxurious layer of violet sky cocoa nibs that deliver intense bittersweet chocolate and fudge notes. The addition of salted caramel weaves a thread of savory-sweet richness throughout the profile, balancing the aggressive roasted malt character of charred grain and espresso. Bold and viscous, this beer harmonizes the sharp spiciness of the rye with a velvety, decadent finish, where the lingering warmth of the alcohol meets a delicate touch of mineral salinity.

Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, creamy, dark tan head that exhibits excellent persistence and leaves oily, dense lacing on the glass.

Aroma. High intensity. Dominant aromas of dark chocolate and cocoa powder from the violet sky nibs mix with spicy rye and burnt espresso. Strong notes of dulce de leche and a hint of salinity from the salted caramel. Low resinous hop aroma is buried beneath rich esters of dried plum and dark cherry.

Taste. Initial impression is a massive wave of bittersweet chocolate and toasted rye bread. Mid-palate introduces a decadent salted caramel sweetness that cuts through the heavy roasted grain bitterness. Malt flavors of dark chocolate, charred toast, and molasses dominate. Bitterness is firm but rounded by the high residual sugars. The finish is long and warming with a lingering savory-sweet cocoa persistence.

Mouthfeel. Full-bodied and viscous with a chewy, palate-coating texture. Carbonation is moderate-low. Significant but smooth alcohol warmth is present. A subtle rye-driven spice provides a light tannic grip, balanced by the velvety creaminess of the cocoa and caramel additions.
