Hacer is a sophisticated sensory study in rustic tradition, blending the profile of a Kvass with the bright acidity of a mixed-culture Farmhouse Ale. The addition of rye bread from The Elder Bread is immediately evident, providing a distinctive toasted crust, caraway-flecked earthiness, and pumpernickel depth. Aromas of sourdough starters and lactic tartness mingle with faint spicy phenols. On the palate, the beer is exceptionally refreshing and light, driven by a crisp, lemon-like acidity and the spicy, grainy snap of rye. The finish is bone-dry and effervescent, showcasing the brewery’s masterful control over funky, wild yeast expressions in a sessionable, experimental format.
Appearance. Deep amber to copper-brown with a persistent, fine-beaded off-white head; slight to moderate haze is present from the bread addition and unfiltered mixed culture.
