Eisbockley is a decadent and concentrated Eisbock that showcases the mastery of freeze-distillation and extended maturation. Two years in toasted Basil Hayden whisky barrels has imbued this lager with sophisticated layers of charred oak, spicy rye, and mellow vanilla. The base beer provides a foundation of rich, toasty Munich malt and deep caramel, while the concentration process amplifies dark fruit notes of plum and raisin. Despite the formidable strength, the alcohol is integrated seamlessly, offering a luxurious warmth that complements the velvety, viscous texture. It is a masterful study in depth, balancing intense Maillard complexity with the refined spirituous character of premium whisky.
Appearance. Deep garnet to dark mahogany with brilliant clarity and attractive ruby highlights. The pour is viscous, producing a thin, fine-beaded ivory head with poor retention that quickly fades to a ring, leaving thick, oily legs on the glass.
Aroma. High intensity featuring rich bready and toasty malt, dark caramel, and concentrated plum. The toasted Basil Hayden barrels contribute prominent aromas of vanilla, coconut, and toasted oak, alongside a clean, warming whisky presence. No hop aroma is present; the fermentation profile is exceptionally clean.
Taste. Initial impression is a wave of sweet, rich malt and Maillard products, followed by complex flavors of bread crust, caramel, and faint chocolate. Significant dark fruit esters of grape and prune are balanced by the spicy, woody tannins of the whisky barrel. Bitterness is low, serving only to prevent a cloying finish, which remains malty and warm with a lingering spirituous dryness.
Mouthfeel. Full to very full-bodied with a luxurious, silky, and syrupy viscosity. Carbonation is low, enhancing the beer's weight. Alcohol warmth is significant and throat-warming but remains smooth and free of harshness or solvent notes.
