The assertive fruit tartness is masterfully rounded by the inclusion of vanilla ice cream, vanilla extract, and lactose sugar, which contribute a luscious, velvety sweetness and a smooth, dessert-like texture. On the nose, bright red fruit and lime zest mingle with a rich, marshmallow-like vanilla aroma. Appearance. Deep pink to reddish hue (10-15 SRM) from the Michigan Tart Cherries; hazy to opaque clarity due to fruit solids and lactose. The head is pinkish-white with moderate retention and light lacing.
Aroma. High intensity aromatics of freshly squeezed Key Lime and bright, acidic cherry. Strong secondary notes of sweet vanilla bean and cream from the lactose and ice cream additions. Fermentation character is clean and lactic, with no significant hop aroma.
