This Czech Dark Lager showcases the depth of a traditional decoction mash, delivering a rich tapestry of malt complexity despite its sessionable strength. Deep and inviting, it balances luxurious layers of cocoa and caramel with the subtle bitterness of roasted coffee. The use of Saaz hops provides a classic herbal and spicy counterpoint to the malt sweetness, cutting through the bready Maillard characters. Expect a remarkably smooth profile with a clean finish, honoring the Tmavý Ležák tradition. It is a refined, drinkable lager where the decoction process enhances the toasted depth, resulting in a sophisticated balance of spice and dark sugar.
Appearance. Deep garnet to nearly black (28–32 SRM) with excellent clarity and a thick, persistent, creamy tan head that leaves dense lacing on the glass.
Aroma. Medium-high intensity featuring rich toasted bread crust, milk chocolate, and light espresso. The Saaz hops contribute a distinct spicy and herbal aroma that complements a faint backdrop of dark plum esters.

Todd and Matt from Good Word make some fantastic lager from their brewery in Duluth, Georgia, so when they swung by to collab whilst in the UK, we decided to brew together our very first Tmavý Ležák (Czech Dark Lager).

Our Matt pulled out his old home brew kit so we could give decoction a spin – we drew off some of the mash, brought it to the boil and returned it, resulting in a more complex, deeper malt profile. We hopped it with the absolute classic Saaz – adding herbal, spicy notes to contrast the rich cocoa, caramel and coffee malt character, before lagering until it was super smooth and ridiculously drinkable
