Sunnyphobia is an assertive West Coast Double IPA that showcases an innovative hop profile featuring Krush, Mosaic, and Nectaron. The sensory experience is defined by a bold core of mixed berries and delicate floral notes from the Krush and Mosaic, layered over deep tropical fruit and resinous dankness. Despite its potent 8.5% ABV, the beer maintains a remarkably refreshing and lean profile, a testament to a healthy fermentation that keeps the malt presence neutral and supportive. A firm, clean bitterness cuts through the hop saturation, leading to a crisp, dry finish that highlights the complex stone fruit and citrus aromatics.
Appearance. Deep gold to pale orange (SRM 6-10) with good clarity. Pours with a moderate-sized, persistent off-white head that leaves delicate lacing.
Aroma. High-intensity hop aroma featuring distinctive red berry, floral blossoms, and tropical pineapple from Krush and Nectaron. Underlying pungent dankness and resinous pine from Mosaic provide depth, supported by a very low, clean, grainy malt background.
Taste. Strong hop flavors mirror the aroma with vibrant notes of blueberry, passion fruit, and citrus zest. The bitterness is firm and assertive but lacks harshness. Malt is supportive and neutral, providing a soft platform for the hops without adding residual sweetness. Finishes very dry and clean with a lingering resinous and tropical aftertaste.
Mouthfeel. Medium-light body with a smooth, lean texture that emphasizes drinkability. Medium-high carbonation provides a refreshing lift. A well-integrated, soft alcohol warmth is present but smooth.
