Gravityphobia is a Triple Dry Hopped Hazy Double IPA that prioritizes a lush, velvety mouthfeel alongside a potent hop punch. The inclusion of Mosaic Incognito and Citra provides a deep foundation of tropical fruit and citrus, while Nelson Sauvin and Nelson Sauvin CGX impart a vivid, lychee-like juiciness. Simcoe adds a contrasting dankness that balances the inherent sweetness. Despite its high strength, a deliberate, extended maturation ensures a smooth, refined finish where the bitterness acts as a sturdy scaffold for the intense hop oils. The result is a saturated, fruit-forward experience that remains remarkably drinkable and structured.
Appearance. Deep gold to light orange (7-10 SRM); opaque with a thick, creamy, persistent white head and heavy lacing.
Aroma. High intensity hop-forward aroma featuring pronounced notes of lychee, passion fruit, and crushed white grapes. Supportive layers of resinous pine and damp earth provide a dank counterpoint, while a neutral, bready malt character sits quietly in the background.
Taste. Initial impression of juicy tropical sweetness quickly joined by complex flavors of mango, grapefruit, and berry. The bitterness is firm and well-defined, providing a dry, dank contrast to the soft malt base. The finish is long and resinous with lingering notes of citrus peel and tropical fruit esters.
Mouthfeel. Medium-full body with a soft, creamy, and pillowy texture. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present, with no harsh hop-derived astringency.
