Plumification is a vibrant Wild Specialty Beer that showcases a harmonious marriage of rustic fermentation and succulent stone fruit. At a sessionable 4% ABV, it presents a delicate balance of tart lactic acidity and the deep, jammy essence of fresh plums. The wild fermentation introduces nuanced layers of earthy funk and hay, which intermingle with the fruit's natural tannins to create a complex yet refreshing profile. Brisk carbonation and a lean malt backbone ensure the plum character remains the focal point, leading to a bone-dry, crisp finish that highlights the intersection of woodsy wild character and fruit brightness.
Appearance. SRM 5-9; pours a hazy, golden-orange with distinct rosy or violet highlights from the plum. The head is thin and white with a faint pinkish tint, exhibiting low retention typical of acidic, wild-fermented styles.
Aroma. Moderate to high intensity featuring prominent notes of fresh and fermented plums. A sharp, clean lactic sourness is complemented by subtle earthy funk, aged hay, and a very light, bready malt background.
Taste. Initial tartness leads into flavors of plum skin and juicy stone fruit flesh. The fermentation character adds light leathery funk and a rustic edge. Bitterness is virtually non-existent, allowing the acidity to provide the primary structure. The finish is very dry and refreshing with a lingering fruit-skin tartness.
Mouthfeel. Light-bodied and effervescent with high carbonation. A very slight tannin-driven astringency from the plum skins adds a pleasant drying sensation. No alcohol warmth is perceived.
