A twelve-month rest in Girvan Bourbon barrels adds layers of rich vanilla, toasted oak, and a subtle spirituous warmth that integrates with the cider’s natural earthy funk. The profile balances bittersweet apple depth with leathery, barnyard notes and a refined wood character. It presents a sophisticated interplay between fruit, wild fermentation byproducts, and the charred sweetness of the bourbon casks, finishing with a lingering, structured dryness.
Appearance. Deep gold to amber (SRM 7-9). Minimal white head with rapid dissipation; brilliant clarity with a still to very light sparkling character.
Aroma. High intensity of bittersweet Yarlington Mill apple skins and juice. Noticeable wild fermentation byproducts including leather, barnyard, and damp earth. Pronounced Girvan Bourbon barrel influence contributes vanilla, toasted coconut, and caramel notes.
Taste. Initial impression is of tannic, bittersweet apple fruit with moderate acidity. The palate is dominated by spicy apple character and complex wild yeast phenols.
