Toppling Goliath’s pseudoSue is a masterclass in the American Pale Ale style, engineered to showcase the vibrant Citra hop. It greets the senses with ferocious aromas of grapefruit, succulent mango, and tropical passionfruit, accented by a crisp evergreen resin. The palate is clean and bright, mirroring the aromatic profile with intense citrus and stone fruit flavors. A delicate to medium body provides a smooth foundation for the hops without becoming heavy. While it possesses a mild bitterness that offers a refreshing bite, the finish remains remarkably clean and dry, allowing the distinctive Citra character to linger gracefully.

Appearance. Pale golden to light amber (6-8 SRM). Features a moderately large, white, frothy head with good retention and light lacing. Clarity is generally clear, though a very faint hop haze is acceptable for the style.

Aroma. High intensity hop aroma dominated by Citra, providing distinct notes of grapefruit, mango, passionfruit, and light piney evergreen. Malt presence is low and neutral, offering a clean, grainy backdrop. Fermentation is clean with no significant yeast esters or phenols.

Taste. Initial impression is bright and hop-forward. Strong hop flavors of citrus zest and tropical fruit lead into a supportive, low grainy-sweet malt character. Bitterness is moderate but perceived as mild, balancing the beer without being harsh. The finish is medium-dry and clean, with a lingering aftertaste of citrus and soft resin.

Mouthfeel. Medium-light body with moderate to high carbonation. Overall smooth texture with no alcohol warmth and a complete lack of astringency, contributing to high drinkability.
