Dino Break is an assertive Double IPA that showcases a classic trifecta of Simcoe, Amarillo, and Centennial hops. The sensory experience is led by a punchy citrus profile, dominated by bright orange and zesty grapefruit, followed by a resonant layer of resinous pine. A clean, neutral malt base provides a lean foundation, allowing the hop intensity to remain the focus without the distraction of heavy caramel. The finish is strikingly dry and crisp for its strength, featuring a firm but smooth bitterness that underscores its West Coast leanings while maintaining a high level of drinkability and a touch of well-integrated warmth.
Appearance. Deep gold to light orange (7-9 SRM); brilliant clarity; large, creamy off-white head with excellent persistence and thick lacing.
Aroma. High intensity hop-forward bouquet; prominent notes of fresh pine resin and sappy spruce from Simcoe, layered with floral orange blossoms and sweet tangerine from Amarillo and Centennial. Background malt is clean and crackery, with a neutral fermentation profile and a whisper of clean ethanol.
Taste. Initial punch of citrus peel and resinous pine. Mid-palette reveals bright orange and grapefruit zest. Hop bitterness is high but smooth, never harsh. The malt flavor is low, supporting the hops with a light bready character. Finishes very dry and clean with a long, lingering resinous aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture from hop oils. Medium-high carbonation provides a crisp bite. Noticeable but well-restrained alcohol warmth. No hop-derived astringency.
