This Imperial Stout presents a decadent sensory profile defined by its intensive aging in Apple Brandy barrels. The pour is viscous and jet black, releasing high-intensity aromas of bittersweet chocolate and espresso, layered with fragrant vanilla beans and the distinct orchard-fruit essence of the brandy. On the palate, a lush, velvety texture carries complex notes of charred oak, burnt sugar, and dark-fleshed fruits like raisins. The high alcohol content provides a deep, integrated warmth that complements the sweet vanilla finish. It is a harmonious, powerful expression of the style, balancing aggressive roasted malts with sophisticated barrel-derived nuances.
Appearance. Opaque jet black (40+ SRM). Deep tan head with moderate to low retention; high viscosity is evidenced by prominent legs on the glass.
Aroma. High intensity. Rich espresso, dark chocolate, and slightly burnt grain roast character. Prominent notes of apple brandy spirit, toasted oak, and aromatic vanilla pod. Moderate esters of prune, fig, and black currant.
Taste. Intense initial impact of bittersweet cocoa and roasted malt, quickly followed by the creamy sweetness of vanilla beans. The middle palate reveals apple-skin character and light oak tannins from the brandy barrels. Firm bitterness is well-integrated with a lingering, sweet-and-warm finish of molasses, dark fruit, and spirit.
Mouthfeel. Very full-bodied, thick, and chewy with a velvety, luscious texture. Low carbonation. Noticeable, smooth alcohol warmth that is well-integrated and not sharp.
