Tommie Sjef Voor (2019) is an elegant Wild Specialty Beer crafted from a complex blend of one, two, and three-year-old barrel-fermented wild ales. The sensory profile is defined by a sophisticated balance between sharp lactic acidity and the delicate, vinous presence of minimal plums. The extended maturation in oak provides a structural foundation of fine tannins and subtle wood spice, which integrates seamlessly with the rustic funk of Brettanomyces. Aromas of damp hay and leather transition into a bone-dry palate featuring notes of stone fruit skin and bright lemon, resulting in a refined, wine-like character that emphasizes fermentation complexity over simple fruit sweetness.

Appearance. Pours a hazy, deep golden hue with soft copper and faint rose-colored highlights from the plums. It supports a thin, white to off-white head with low to moderate retention and minimal lacing, typical of high-acid wild ales.

Aroma. High intensity aromatics featuring a sharp, citrusy lactic acidity and a pronounced wild funk characterized by notes of aged leather, hay, and a dusty cellar. Subtile stone fruit esters of plum and apricot are complemented by vanillin and toasted oak from the multi-year barrel aging process.

Taste. Initial impression is a bright, puckering acidity that leads into complex layers of lemon zest, tart plum skins, and a hint of stone fruit pit.
