Poured with a stunning pinkish-copper hue, it opens with a vibrant bouquet of wild strawberries, white currants, and a refined earthy funk. The signature house culture provides layers of damp hay and soft leather, perfectly integrated with a delicate stone fruit ester profile. On the palate, it is exceptionally dry and effervescent, showcasing a light non-lactic acidity and subtle tannins that mimic a dry rosé wine. Appearance.Presents a beautiful rosé to pale amber color (6-12 SRM) with a light pinkish tint. Clarity ranges from brilliant to a soft haze. The off-white head is fine-beaded with moderate retention, leaving delicate lacing on the glass.
Aroma.Moderate to high intensity. Dominated by a complex Brettanomyces character of wet hay, aged wood, and subtle barnyard funk. These notes are woven into a bright tapestry of red berries, stone fruits, and a hint of floral citrus. Malt presence is minimal, appearing only as a whisper of crackery grain.
Taste.Initial impression is a bright, fruity burst of tart berries and peach. The mid-palate introduces a sophisticated earthy funk and a hint of dusty leather.
