Nuances of dried citrus rind and rhubarb emerge through a delicate, honeyed wheat backbone, while the extended wood contact imparts a soft, vanillin-tinged structure. This blend of wild ales creates a sophisticated interplay between vibrant tartness and the mellowed, oxidative complexity of its most mature components, finishing exceptionally dry with a lingering, multifaceted wild character.
Appearance. Deep golden (6 SRM) with brilliant clarity and a thick, rocky, mousse-like white head that demonstrates exceptional retention and effervescence.
Aroma. High intensity with complex, balanced funkiness featuring notes of horse blanket, old leather, and dried hay. Fruit-forward esters suggest citrus rind, rhubarb, and green apple, supported by a faint bready wheat malt and a distinct, seasoned oak character.
Taste. Sharply sour but harmoniously balanced by a deep, funky complexity. Flavors of lemon zest and pome fruit lead into a mid-palate of earthy barnyard notes and light vanilla from the oak puncheons. Malt is minimally perceived as a grainy backdrop. It finishes bone-dry and crisp with a long, tart, and elegantly wild aftertaste.
Mouthfeel. Medium-light body with a soft, velvety texture despite the high, sparkling carbonation. Features a significant puckering acidity and a light, well-integrated alcohol warmth.
