This sophisticated Brett Beer presents a profound marriage between wild fermentation and viticulture. Tommie Sjef’s signature house character provides a rustic foundation of wet hay and farmhouse funk, which is transformed by an exceptional concentration of wine grapes. The result is intensely vinous, offering a multi-layered sensory experience of stone fruit, white currant, and a subtle tannic structure reminiscent of skin-contact wines. Despite its high 9% ABV, the profile remains elegant, driven by the attenuation of Brettanomyces which leaves the beer dry and crisp. Complex notes of old cellar and damp earth meld seamlessly with the bright, acidic fruit profile, creating a lingering, wine-like finish.

Appearance. Deep amber to burnished orange (10-14 SRM) with a slight, persistent haze. Pours with a moderate, fine-beaded white head that leaves delicate lacing as it recedes.

Aroma. High intensity; prominent bouquet of ripe stone fruits, white grapes, and apricot. Layered underneath is a complex Brettanomyces character showcasing farmhouse funk, damp hay, and a touch of goat-like musk. Low crackery malt is barely perceptible behind the vinous esters.

Taste. Initial impression is dry and vibrantly fruity. High levels of grape-derived esters suggest peach, pear, and tropical notes. The Brett character is well-integrated, providing earthy and leathery notes rather than aggressive funk. Bitterness is low, allowing the natural grape acidity and light tannins to provide structure. The finish is exceptionally dry, long, and vinous.

Mouthfeel. Medium body with a crisp, highly attenuated texture. Moderate carbonation provides a lively prickle on the tongue. A gentle alcohol warmth is present but well-integrated, accompanied by a light, wine-like astringency from the macerated grape skins.
