Tommie Sjef Groen presents an elegant, dry-hopped Brett Beer profile defined by its vibrant hop-forward character. This wild ale showcases an abundance of noble German hops, imparting layered notes of fresh herbs, dried hay, and bright lemon zest. The extended six-month bottle conditioning has masterfully integrated these hop aromas with a rustic farmhouse yeast character, yielding a complex sensory experience. A delicate citrus-driven acidity provides structure, while the Brettanomyces-induced dryness ensures a crisp, refreshing finish. The subtle evolution of the noble hop character over time adds depth, moving from floral intensity to a sophisticated, earthy herbal complexity.
Appearance.Pale gold to light amber (SRM 4-6). Moderate, white, fine-beaded head with fair retention and some lacing. Slightly hazy appearance from significant dry-hopping and yeast in suspension.
Aroma.Moderate to high intensity. Dominant herbal and floral hop notes reminiscent of noble German hops, accompanied by bright lemon and citrus peel. The fermentation profile offers a distinct farmhouse funk, including wet hay and light barnyard notes, melded with fruity esters of apricot and pear. Low doughy malt character in the background.
Taste.Crisp and bone-dry. Initial flavors of zesty lemon and herbal tea lead into a complex mid-palate of dried herbs and floral noble hops. Bitterness is mild and well-integrated, providing structure without being harsh. The Brettanomyces character contributes light earthy funk and stone fruit esters. The finish is clean and very dry with a lingering citrus and herbal aftertaste.
Mouthfeel.Medium-light body with high, prickly carbonation. No perceived alcohol warmth at 5% ABV. Crisp and highly attenuated with a slight, refreshing astringency from the hops and low acidity.
