This complex Wild Ale represents a masterful convergence of brewing and viticulture, defined by a year-long maceration on Kékfrankos grapes. The sensory experience opens with an expressive aromatic profile of strawberries, ripe peaches, and dark cherries, layered over subtle almond and toasted oak. On the palate, the bold blackberry and cherry character of the grapes is balanced by a deliberate, delicate bitterness from aged hops. The wild fermentation imparts a gentle acidity, while the long skin contact provides a firm tannic structure. It concludes with a remarkably dry, port-like finish, leaving lingering impressions of creamy oak and earthy complexity.
Appearance. Deep ruby to garnet with a soft, pinkish-white head; slight haze is present due to the fruit maceration and wild fermentation, though it remains luminous in the glass.
Aroma. High intensity; dominant notes of dark cherry, strawberry, and ripe peach are supported by a complex Brettanomyces character of leather and earthy funk; subtle almond and seasoned oak wood provide depth alongside faint floral hints from aged hops.
Taste. Initial flavors of tart blackberry and cherry give way to a nuanced wood character; the malt is lean, allowing the Kékfrankos fruit and tannic structure to lead. A moderate bitterness from aged hops provides balance against a gentle lactic tartness. The finish is bone-dry and vinous, reminiscent of a dry port with a lingering touch of almond skin.
Mouthfeel. Medium-bodied with a structured, wine-like mouthfeel; moderate carbonation and a noticeable but well-integrated alcohol warmth; distinct tannic astringency from grape skins adds a pleasant grip to the finish.

Regelmatig brengen de brouwers een nieuwe vintage Druif uit; het is het bier waar het allemaal mee begon. Een wild bier gemaakt met biologische rode wijndruiven (geoogst in 2021, regio Mátra, Hongarije). De vintage van dit jaar wordt uitsluitend gemaakt met Kékfrankos-druiven. Een perfecte druivensoort die uitstekend combineert met onze wilde ales. We gebruikten een blend van verschillende wild ales (ca. twee jaar gerijpt in houten vaten), lieten hergisten en lieten nog een jaar verder macereren op de wijndruiven. De lange maceratie met de druiven geeft het bier meer structuur en gelaagdheid in smaak, aangezien de schillen van de druiven de tijd hebben gehad om hun tannines en hun smaak vrij te geven. Bij deze vintage probeerden de brouwers ons te concentreren op de interactie van de iets meer uitgesproken bitterheid en delicate fruitige aroma's van de oude hop die de brouwers in het bier gebruikten, en op de tannines van de wijndruiven. Naar onze mening heeft dit geresulteerd in een zeer goed uitgebalanceerd wild bier, waarbij de grenzen tussen bier en (natuur)wijn perfect vervagen. In zijn aroma toont Druif (2022) aardbeien en rijpe perziken, samen met donkere kersen, een lichte hint van amandel en een vleugje hout uit de eikenhouten vaten. Smaakvol begint het met de typische tonen van donkere kersen en bramen van Kékfrankos. Deze gedurfde fruitigheid gaat gepaard met een zachte zuurheid en een vrij droge, bijna portachtige afdronk. In de afdronk is het tanninerijke deel van bramenzaad en amandel aanwezig, samen met een vleugje romig eikenhout.
