Tommie Sjef Oude (2021) is a masterful tapestry of fermentation complexity, blending wild ales aged up to four years in oak puncheons. The extended four-year maturation in wood introduces profound layers of seasoned oak, earthy funk, and a rustic leatheriness. These deeper, mature notes are brightened by a younger component that infuses the beer with delicate floral aromas and fresh herbal accents. The palate is defined by high attenuation, leading to an exceptionally dry finish that showcases stone fruit and citrus esters alongside a gentle, non-lactic acidity. It is a harmonious marriage of age and vibrancy, delivering a sophisticated Brett Beer experience with a lingering, woody depth.
Appearance. Deep gold to light amber (7-11 SRM). Topped with a moderate, off-white head that shows fair retention and leaves delicate lacing. Clarity is slightly hazy, typical of an unfiltered, long-aged wild ale blend.
Aroma. High intensity with a complex layering of Brettanomyces-derived fruit and funk. Initial notes of apricot, lemon zest, and dried flowers transition into more rustic scents of wet hay, barnyard, and aged leather. The four-year puncheon aging provides a clear seasoned oak presence with subtle hints of vanilla and dried herbs.
Taste. The initial impression is bone dry and crisp. Low cracker-like malt flavors are quickly overtaken by a complex fruit profile of peach and citrus peel. The Brettanomyces character is prominent but well-integrated, offering earthy and spicy phenolic notes. Low bitterness is complemented by a light, woody tannin from the oak puncheons. The finish is exceptionally dry and long, lingering with a refined herbal and floral aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a prickly, refreshing sensation. There is a subtle alcohol warmth consistent with its strength, and a light, pleasant astringency from the extended oak aging. Overall texture is lean and highly attenuated.
