This sophisticated Brett Beer represents a complex blend of wild ales aged between one and nearly five years in oak barrels. It opens with an expressive nose of creamy Chardonnay and distinct minerality, layered with a pleasant, earthy funk reminiscent of slightly sweaty, wild yeast character. The palate is defined by its remarkable balance, offering flavors of salted lemons and dry apple skin alongside savory herbal accents of laurel and thyme. Its structure is uniquely ethereal, featuring a pronounced hop bitterness and dry wood tannins that create an open sensation. The finish is exceptionally dry and mineral-forward, showcasing the brewery’s masterful use of wood and time.
Appearance. SRM 3–5. Pours a pale gold with a slight hazy luminescence. Forms a fine-beaded white head with moderate retention and delicate lacing that eventually settles into a thin, persistent ring.
Aroma. High intensity. Complex bouquet of mineral-driven Chardonnay and oak vanillins. Prominent Brettanomyces funk presents as slightly sweaty, earthy hay. Secondary notes of Meyer lemon, dried herbs including thyme, and a subtle orchard fruit skin character.
Taste. Bone-dry entry with immediate mineral and citrus impact. Flavors of salted lemons and tart apple skins dominate the mid-palate, complemented by savory laurel and thyme. Oak contributes structure rather than heavy flavor, though light tannins are present. High attenuation leads to a crisp, clean finish with a lingering, firm hop bitterness and a dry herbal aftertaste.
Mouthfeel. Medium-light body with a lean, airy structure that lacks heavy backbone but remains elegant. Moderate-high carbonation provides a lively, effervescent prickle. Noticeable dry tannin astringency from the long oak aging. Alcohol warmth is well-integrated and subtle.

In the nose you will find almost creamy Chardonnay notes and some minerality together with slightly sweaty notes (in a good way). The taste is quite balanced. Salted lemons, dry apple skin, herbs like laurel and thyme, a hint of oak and hoppy notes which give off a sweetness of sorts. The beer is perfectly drinkable because of the pronounced bitterness and dry tannins and interesting structure of the blend: it lacks a bit of backbone which actually helps to create a kind of open space in a good way.
