To Øl Yule Malt 2022 is an opulent Imperial Stout that bridges the gap between decadent dessert and sophisticated spirit. Following eleven months in Bourbon and Panama Rum barrels, the sensory profile is saturated with vanilla, toasted oak, and dark molasses. The lactose-driven creaminess of the Milk Stout base provides a velvety canvas for deep roasted malts, evoking espresso and bittersweet chocolate. Notes of spiced rum and caramel-forward bourbon weave through a dense, dark fruit profile of raisins and figs. This is a massive, warming sipper where the charred oak tannins perfectly balance the residual sweetness for a lingering, luxurious finish.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, deep tan head that shows moderate retention, leaving oily legs on the glass as it settles, a testament to its high viscosity and alcohol content.
Aroma. High intensity and deeply complex. Initial notes of dark chocolate and roasted coffee beans are layered with intense Bourbon-derived vanilla, coconut, and toasted oak. The Panama Rum barrels contribute aromas of brown sugar, molasses, and subtle spice. Prominent dark fruit esters resembling raisins, prunes, and dried figs are present, with a smooth, well-integrated alcohol presence and negligible hop character.
Taste. An intense, multi-layered palate beginning with sweet milk chocolate and creamy lactose. The mid-palate introduces espresso, charred grain, and black licorice. Significant barrel influence provides flavors of spiced rum, vanilla, and oak tannin. Medium-high bitterness is present but remains supportive rather than aggressive, balanced by the residual sweetness. The finish is long and bittersweet, featuring lingering notes of dark fruit, cocoa, and warming spirits.
Mouthfeel. Very full-bodied with a thick, chewy, and velvety texture enhanced by the addition of milk sugar. Carbonation is low to moderate, providing just enough lift to the dense liquid. A smooth, significant alcohol warmth is present but not hot or solventy, coating the throat pleasantly without astringency.
