To Øl Yule Mælk (Yellow Label)

This Imperial Stout presents an imposing sensory profile defined by its staggering 15% ABV and a massive lactose addition. The experience is dominated by a dense, velvety sweetness that frames intense layers of dark chocolate and espresso-like roast. Aging in Cognac and Sherry barrels introduces sophisticated top notes of dried figs, burnt sugar, and a noble vinous oxidation reminiscent of fine dessert wine. Despite the immense weight, the spirit-forward warmth remains smooth, intertwining with the creamy texture to create a decadent, lingering finish. It is a harmonious yet aggressive exploration of richness, where barrel-derived tannins and dark fruit esters meet a syrupy, indulgent malt base.
Appearance. Jet black and opaque (40+ SRM). It pours with a thin, mocha-colored head that dissipates quickly into a persistent oily collar, leaving thick, viscous legs on the glass indicative of its high alcohol content and sugar density.
Aroma. High intensity and complex. Dominant notes of bittersweet chocolate, heavy cream, and toasted marshmallows are layered with the distinct oxidative character of Sherry, featuring raisins and prunes. The Cognac barrels contribute aromas of vanilla, oak, and a subtle, floral spirit warmth.
Taste. The initial impression is intensely sweet and coating. Deep roasted malt flavors of cocoa and dark-roasted coffee are balanced by a heavy lactose creaminess. Mid-palette reveals complex barrel influence including toffee, dark fruit, and a hint of rancio from the Sherry. Bitterness is moderate but serves mostly to prevent the finish from becoming cloying. It concludes with a long, warming, and spirit-forward aftertaste.
Mouthfeel. Full to extremely full-bodied with a chewy, syrupy, and viscous texture. Carbonation is low, enhancing the creamy mouth-coating effect of the lactose. A significant, smooth alcohol warmth is present but integrated without being harsh or solventy.
