Bright, zesty Grapefruit dominates the senses, supported by a sophisticated herbal tapestry of Coriander, Szechuan Peppercorn, and Tarragon. The kettle-souring process provides a crisp, lactic acidity that sharpens the fruit profile without overwhelming the palate. Despite the presence of Tarragon, the character remains refreshingly lean and citrus-forward rather than savory. It is a light-bodied, effervescent ale where the delicate spice and numbing hint of peppercorn integrate seamlessly into a tart, dry finish, embodying the creative spirit of modern sour brewing.
Appearance. Pale straw to light gold (3–5 SRM). Pours with a moderate white head that dissipates relatively quickly due to low pH. Clarity is generally clear to slightly hazy from the herbal infusions.
Aroma. Moderate to high intensity. Dominant fresh grapefruit zest and pith aromas are at the forefront. Secondary notes of floral coriander and a distinct, slightly anise-like tarragon streak follow. Faint earthy spice from Szechuan peppercorn is detectable. Low bready malt. Lactic tartness is clean and sharp without funk.
Taste. Bracingly tart initial impression with a clean lactic acidity. Grapefruit flavor is prominent, offering both juice and zest qualities. The herbal mid-palate introduces spicy coriander and a unique, subtle tarragon sweetness that remains refreshing. A light peppery tingle from Szechuan peppercorn appears toward the end. Hop bitterness is very low, as acidity provides the structural balance. Finish is bone-dry and crisp.
Mouthfeel. Light body with a thin, refreshing texture. High carbonation provides a lively, prickly mouthfeel. Very low alcohol warmth consistent with its sessionable strength. No significant astringency, though a faint, pleasant numbing sensation from the peppercorns may be perceived.
