To Øl Mr. Blue is a vibrant, rustique Saison that masterfully bridges Belgian tradition with an intense blueberry addition. The grist, featuring Rye, Wheat, and Oats, creates a robust, spicy foundation that supports a massive addition of fresh blueberries, yielding complex notes of a Nordic forest floor. Galaxy and Belma hops lend subtle tropical and berry-like nuances that complement the fruit’s natural acidity. It presents a complex tapestry of Belgian yeast esters and phenols, finishing very dry yet rounded. This high-strength farmhouse ale remains highly effervescent, balancing the rustic grain character with a sophisticated, fruit-forward elegance.
Appearance. Deep ruby to purple-tinted amber (12-18 SRM) with a slight haze from being unfiltered. Topped by a long-lasting, dense, rocky pinkish-white head that leaves thick Belgian lace on the glass.
Aroma. High intensity of fresh blueberries and earthy forest mulch. A pleasantly aromatic mix of peppery Belgian yeast phenols and fruity esters. Galaxy hops provide a hint of passionfruit, while Belma adds a subtle strawberry note, all backed by a spicy, grainy malt character from the rye and wheat.
Taste. The initial impression is of tart blueberries and citrusy esters, followed by a rustic, grainy malt complexity. Rye provides a distinct peppery snap, while the wheat and oats offer a soft palate. Hop flavor is moderate with tropical and berry notes. Very high attenuation leads to a very dry, bitter, and spicy finish with no residual sweetness.
Mouthfeel. Medium-full body, enhanced by the addition of oats and rye. Very high carbonation creates an effervescent, lively sensation. There is a light, well-integrated alcohol warmth and a subtle, pleasant astringency from the blueberry skins.
