Measured Immortality is a masterfully layered Wild Specialty Beer that showcases a deep vinous complexity over a dark, solera-aged base. The influence of French oak foeders provides a sturdy tannic backbone, while re-fermentation with sour cherries and blackberries imparts a vibrant, ruby-tinted acidity. Secondary aging in port wine barrels introduces refined notes of fortified grape and dark fruit, seamlessly integrated with the earthy bitterness of cacao nibs and the smoothing sweetness of vanilla. The resulting profile is assertively tart, marrying wild funk with rich, decadent layers of dark fruit and wood, resulting in a sophisticated, multi-dimensional sensory experience.
Appearance. Mahogany with deep garnet highlights (SRM 25-30). Pours with a thin, pink-tinted tan head with moderate lacing. Hazy to opaque due to fruit additions and wild fermentation.
Aroma. High intensity aromatics of sharp lactic acidity and funk, reminiscent of leather and horse blanket. Potent notes of bright sour cherry and jammy blackberry are balanced by vinous port wine and toasted French oak. Faint hints of vanilla and dusty cacao nibs emerge as the beer warms.
Taste. Initial impression is sharply tart and puckering. Intense flavors of tart cherry and dark blackberry dominate the mid-palate, supported by a subtle toasted malt character. Complex wood-derived tannins from port barrels add structure, while cacao nibs provide a mild, earthy bitterness. The finish is exceptionally dry and lingering with a vinous aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a brisk, lively sensation. Noticeable tannin presence from the oak and fruit skins adds a slight astringency. Alcohol warmth is light and well-integrated.
